The Delicious $15 Costco Dinner Find I’ll Be Buying for the Rest of the Year

I’m a big, big fan of prepared dinners. Not just the kind that is made for single portions and in individually wrapped packaging (although these types of meals do help me out when I need something in a pinch), but also the big meals that can feed many without having to make much extra effort. So when I come across a dinner that looks tasty enough to be a crowd-pleaser (and maybe even fools my guests into thinking I actually made it from scratch), I grab it right away. And this tasty chicken pesto lasagna from Costco absolutely meets the requirements.

Sold at $14.99, this lasagna serves six people, making it just under $2.50 a serving. It is made with white chicken, basil pesto (made with basil imported from Italy!), creamy Alfredo sauce, mozzarella, all layered in Giovanni Rana’s lasagna sheets made with his signature dough. Each slice is filling to serve on its own, but you could also make a meal out of it by tossing together a quick lemony green salad with radicchio and pepitas, and if you’re feeling extra ambitious, a loaf of homemade garlic bread. Or just serve the lasagna as is; I certainly would.

Keep in mind that this chicken pesto lasagna is sold in the refrigerator section of Costco, not the freezer section, and the lasagna does not have any preservatives. This means you either need to plan on using it within the week, or pop it in the freezer to save for later. Then when you want to use it, simply defrost it in the fridge for 24 hours. This lasagna bakes in the oven for 20 minutes or, if you’re especially hungry, 8 minutes in the microwave. That’s right, an entire six-serving lasagna in the microwave. I think it’s safe to say it would be well worth stocking up on a few of these lasagnas to have for later.
