Shaner Hotels Appoints Director of Food & Beverage Brian Fung and Executive Chef Brian Archibald at Key Largo Autograph Collection Hotel

Playa Largo Resort & Spa, an Autograph Collection beachfront luxury property situated on the Florida Bay in Key Largo, Florida, is pleased to welcome Brian Fung as Director of Food and Beverage and Brian Archibald as Executive Chef of the property.

Brian Fung joins the Playa Largo Resort & Spa team as its new Director of Food and Beverage. Joining the resort from Mauna Lani Resort in Hawaii, Fung will oversee the food and beverage, culinary, banquet and events operations for Playa Largo. Previously, Fung held positions as the Director of Event Operations at the Ritz Carlton Kapalua and the Director of Banquets at the Four Seasons Macau.

A skilled director, Fung oversaw the opening of over 22 dining venues throughout New York City as the Operations Manager at Great Performances Hospitality Management. During the pandemic, Fung developed and managed an emergency meal delivery plan to deliver over 300,000 emergency meals to seniors across the city. A leader who is as
caring as he is skilled, Fung will bring this experience and tenacity to Playa Largo Resort & Spa.

Executive Chef Brian Archibald comes to Playa Largo Resort with over 25 years of food and
beverage experience. Most recently, he served as the creative lead behind Francine Brand from
RDG. His career has seen Archibald running top kitchens around the US including as Director of
Culinary & Beverage of the 5-star 5 Diamond Boulders Resort & Spa as well as positions at the
5-star 5 Diamond Phoenician Resort, JW Marriott Property’s Desert Ridge and the Camelback
Inn, Ritz Carlton.

In 2017, Archibald appeared on Food Network’s Beat Bobby Flay against Iron Chef Bobby Flay where Brian Won against the esteemed Iron Chef. Archibald is the recipient of the Marriott International Raising Chef Star Award as well as the Chaine de Rotisseur’s Young Chef Award for the West Coast. An ingredients-driven chef, Archibald will bring his distinct blend of Mediterranean cuisine using French techniques to Playa Largo Resort.
